Of the ones I own I am in between Carnoustie and Valderrama.
Carnoustie because the Severe Lie Penalty rough is very much in play around almost the whole course. If you are driving it crooked you are in trouble. This rough takes 40-60% off the distance of your shots. A real bad one and you can't even make it back to the fairway.
Valderrama also has SLP rough, but more than that the oak trees are in so tight. You can get in them and have a hard time getting out, at all. OB in play on some holes. Plus, small and severely sloping greens. Many 6s and 7s to be made here. I shot 76 here a while back which I think is the best round I have ever played on the sim.
