I was able to setup two iPhone cameras in FSX with moderate success so wanted to share. First, download iVCam for Windows and iPhone -- you may need to pay $10 for a year but you can use the limited version for free. The website shows how to setup multiple instances and you can connect via wifi if on same network or via USB. I connected both via USB and did not use the best settings in the app and the "lag" was not bad at all. I was getting about 60fps and was able to use the zoomed out lens on my 11 Pro in a tight space and had two iPhones going for FO and DTL.
Pros: Picture was great, pretty good in low light, got 60fps, still tweaking the settings on the phone app for best results
Cons: For whatever reason FSX was picking up the swing starting in my transition and was missing my back swing, not sure how to fix that -- other cameras have always gotten the entire swing. Seems to only allow landscape mode, again need to play around with the app settings
Not ideal but a little better than the cheap ebay usb cameras and not as expensive as going the $500 imaging source route.
