After researching, I have decided to go with SkyTrack as my simulator. Before I pull the trigger, I would appreciate any feedback on process/cons and if there is definitely a better solution that I should use. Thanks.

I am also going with Skytrak and have started to build my sim. Got Skytrak and all the bits but now just need to put it all together and build the setup in my garage. One thing I did find out was that you can no longer buy JNPG with Skytrak as apparently Trackman has exclusive rights, if you already have a subscription then you can keep but there are questions over whether you can upgrade or not. Only a problem I suppose if you definitely want JNPG.
I'll start a post soon tracking how I have built my sim soon, its going into my garage. I have also bought SkyPro.
