Anyone know if there is a way to move the center line to the middle of the screen? It’s off-center but I am hittting into the center of the screen itself.

Yes there is a utility from Foresight called simulator setup which has you measure the various distances in your simulator setup. If you need a copy PM me your internet address and I'll send you a link to download.
