Does it really matter how far back from the screen you are when you hit? I have a contractor coming to quote me to remove some trusses and where I place my mat will determine what trusses need to be removed.

Ideally I would like to be as close to the screen as possible to give me as much room as possible behind me for seating. Is 7ft too close?

I know it depends on projector and type of sim.

For this scenario, lets assume I am going with my existing Epson PowerLite Home Cinema 5030UB and GC Quad

I am six feet out and don't think twice about it - but the longest club I hit is 4i. Sometimes I flirt with a ball ricochet if I hit my 54* with the bounce exposed (hitting top of 8' screen from 6' out) but it's not dangerous enough to matter. YMMV

I hit from about 7ft with no problem with any club in the bag, I know people that hit from closer too. So if that’s the distance you want to hit from, no worries you can make it work. Just make sure you have enough room behind your screen, most people usually have 1ft of space behind the screen.

I hit from just over 7 feet and don't consider it to be too close. Just have to make sure you have the bounce back under control.

Photo-based monitors like the quad give you a little more flexibility than radar units as they don't require a minimum ball flight distance. As long as you have the bounce back controlled and aren't hitting the enclosure on your follow through, swing away. One caveat is that my screen size is only 9x9, and I can see how a larger screen might make you feel like you're too close to the image.

Does an old mattress behind the screen really make a difference/help with bounceback?

I would say probably most people put something behind. Mattress toppers and comforters, memory foam, etc. I have some memory foam and about 5 blankets, sheets and even an old tablecloth back there just to create multiple layers. I can hit a driver from 7.5 feet away and it bounces back off the screen probably less than a foot. Not sure about a mattress specifically. But you'll likely want to have something back there. And of course, having the right amount of screen tension is also key.

Can you afford to take out more trusses ie not comprise structural aspects by incurring any more costs than you’re already comfortable spending on this change? This way you future-proof if you end up in a situation where you feel 7’ is too close in the future after hitting for few days from 7’. If hitting mat is moveable you can move it further away.

Great thought here. GC is on his way. If it were up to me, I'd get rid of all the trusses and do a big tray ceiling where the sim area is,. I just dont know if that is structurally possible. As of now, my plan is to just take out 1 or 2 trusses so I have 9 ft ceilings to swing instead of 8.
