I am building an enclosure for my sim and it will have sheetrocked walls and ceiling. Am going to foam pad the sides a ceiling close to the screen. Wondering what some of you have used. Will acoustic foam sheeting work?

There's many options to choose from including pads you buy or DIY, just depends on your budget and time and the look you want. I haven't done any of these but looking into options myself, but this is what I've come across, including suggestions I found here.
Vant Panels. Upholstered foam panels mainly intended for headboards.
Transform your room from blah to brilliant with easy-to-assemble wall panels, platform beds, elevated beds, mattresses, nightstands, bed benches, lamps & more.
Acoustimac foam panels. Many options to choose from.

AK Athletic gym wall pads. They have gym pads or even a setup for golf simulators.
Our Wall Padding is perfect for taking the impact of a golf ball. This is a standard wood backed wall pad - 2" thick foam, 2' wide x 6' tall. Wall pads are permanent wood-backed panel
The above options can get pricey. You can also make your own foam panels. I would attach foam panels to 1/2" thick wood and hang the wood panels using Z-clips. Maybe each panel is 4x4ft or 4x6ft or whatever. You can use acoustic foam tiles from Amazon or acoustic foam sheets, whatever. You can even upholster the foam if you want that look.
The one thing to consider for any foam or upholstery on the walls, is to have a material that isn't reflective to IR light. If it is reflective to IR light, it can cause issues if you have a floor mount camera based launch monitor. Even if you don't have one now, you might change your LM later and if the walls are IR reflective, then you might have to change the wall pads.
Maybe some people who have a floor camera LM with wall pads can comment if there's certain materials or fabrics that don't have issues.
