Each new generation of graphics card increases performance in both categories. Generally speaking RTX cards increase Ray Tracing performance and non Ray Tracing performance (rasterization) vs the previous generation GTX. To my knowledge there are no previous or current simulator software offerings that leverage RTX or Ray Tracing. You’re probably only going to use it in AAA games titles for the next couple years. Simulator graphics are generally way behind the cutting edge of gaming.
Similar to GSMArena for phones, there's several websites where you can select two GPU cards and see the head to head comparisons between the two, like GPUBoss.
A good place to start is selecting whatever is recommended for the software you want to use and then looking at the models available to you and seeing how they stack up. You might have to be careful about what sort of slot/space requirements there are and how that affects your motherboard and PSU if you're building your own with a case.

User benchmark actually much more info than you need but it's good also.
Also learned a bit about low profile and half-sized cards when I was considering a used/renewed PC.
It's just nuts out there in the build/buy a PC world.
Just wanna make sure that I can use anything I buy now for along time.
Even if it's presently a big number. Yikes!
