Hello, hopefully you guys can help me out. The image size will be 11'8" wide x 6'7" high, just curious what size I should order my screen? I do plan on having the padding around the edges, so is 12" extra around the edges proper? What do you guys think?
How big to make screen in relation to image size

Not sure you need to leave as much at the bottom as the other sides unless you’re passing there too?
I am having the same image width as you but am going with a 16:10 ratio and WUXGA resolution to get some extra image height without losing hd resolution. I’m getting someone else to build the frame and screen etc but from what he tells me from the edge of the image to the outside of the frame is about 6 inches and that includes the gap between the edge of the screen and the frame it is connected to....ie 12 inches all around as you suggest sounds a lot?

With a screen that is only 6'7" in height, and you building your frame to be just slightly larger than the screen, you need to be concerned with hitting the "ceiling" of your enclosure. This will be impacted by how far away you will stand.
If it were me, I would make my enclosure at least 9 feet high, preferably 10. After finding a spot on the screen I am comfortable projecting the image to, I would black out the top and bottom edges (sides too).
