I am building my enclosure and I can go 9 feet high or 10 feet high. Is the extra foot worth it -I am planning on 16x10 aspect ratio

Yes...always worth it for the feeling of being immersed. Just be wary the WUXGA (1920x1200 - 16:10) projectors are very expensive, especially for short throw.
I have future proofed mine, running at 16:9 with Optoma Darbee (1080) but my black valance is moveable to give me 16:10 if I upgrade my projector.
