I have some concerns about my wedges hitting the ceiling all the time and it becoming annoying if I stand 10 feet away.

10 feet might feel like a bit much to me for a screen that is only 7' 7'' feet tall. If you'll be playing sim courses you'll be hitting some flop shots and high-lofted bunker shots that could make that dicey. Is the screen set up yet? Best thing to do is get it set up and then experiment. Put your mat 10 feet away and gradually hit higher lofted shots to see how high up the screen they are going.
For perspective, I hit from about 7.5 feet and my screen is 9 feet tall and I don't have a ton of room to spare with flop shots. They pretty much hit near the top of the screen and go right up into the enclosure roof.
