I was thinking about just laying turf in the whole sim area raised to the level of a hitting insert, and cutting out the area for the insert, and not getting an actual stance mat. Would that be fine to stand on? Is a stance mat actually needed?

Depends on what you are looking for. The stance mat tends to be the same degree of hardness as a fairway. Normal fake turf tends to be a lot harder. The other thing with a hitting insert is you have to securely fasten it to the floor or it will fly around a bit especially when you hit irons and take a "divot"

If I just turf the whole area and not do a stance mat, how durable would it be where I stand? Would it wear out from my shoes? Eventually would I have to either cut out the area where I stand and replace that turf, essentially a stance mat area? What kind of turf are you all using?

I just bought 6'x10' mat from all turf mats, and I think it's perfect for my room size and distance from the net. If I want to cover the whole area, I just need to buy another one and make it 12'x10'.
