I am currently in planning stages for a set-up in garage. I plan on doing ceiling mount for projector - but might have an issue with placement of projector in center of screen. If I have it offset 2 feet to the right or left of center, is a projector capable of being adjusted to showing a centered image? Would that be keystone correction? Is that something most/all would be capable of or do I need to find a specific option in the projector.

Depends on the projector, some of the better ones have a lens shift (don't confuse this with pixel shifting, which is used to generate a faux 4k image - completely different feature and topic of discussion) feature that can usually move the image. depending on the distance two feet offset at the projector position could be considered too much. You could do lens shift and hopefully then use keystone, but would hope it would only be minor keystone adjustments.
