What's the best way to connect my projector to my laptop without having to fish an HDMI wire? If I cast with a dongle does it add a delay to the shot display?

To my knowledge, there are certain projectors that have bluetooth capability. I'm not sure if that particular optoma does or not.
You will need to use a power cord to plug the projector in, so you're already fishing one cable from it. I used zip ties to keep my HDMI and power cord together (until the last few feet where the power cord has to go one way to plug in and the HDMI cord another way to reach the computer).
