Is there a way to use a 16:9 or 16:10 ratio and cutoff the sides on a 4:3 screen? Just wondering if the image would be better losing a little on each side as opposed to 4:3 making image look kinda squished? My projector can do 4:3 or 16:9.

you could if your projector had a blanking feature which would allow your to cut of edges on all 4 sides. you can look in your settings on projector. -
You won't lose image on the sides, you will lose it on top and/or bottom. For example:
If you have a screen that is 12 wide and 9 high (4:3 in dimension), your 4:3 image would of course be 12 wide and 9 high. In 16:9, it would still be 12 wide but it would then only be 6.75 high. In 16:10 it would be 12 wide and 7.5 high.
If you're working with a standard 1920x1080 projector, your resolution will be better in 16:9 (1920x1080) than it will be in 4:3 (1440x1080). So it comes down to quality vs. quantity. Taller image in 4:3, but slightly less crisp vs. a shorter image in 16:9 but a little more crisp. But they will both fill up the screen from left to right. Try out both and see what your preference is. But if you have a 4:3 screen and a projector that can do 4:3, why would you go with anything else? You can fill your whole screen.Comment
