For me getting the projector mounted correctly so the image filled the screen without using Keystone or GPU correction was the most challenging. To help others faced with a similar setup I figured I would describe what I settled upon as another option.
I had some leftover cutoff pieces of curtain track and decided to use them to allow sliding the projector into/away from screen, as well as left/right by mounting projector/mount to the tracks. The tracks come with end caps to keep curtains from sliding past the end of the track. I just cut the end off of end cap leaving only the section that slides along the track (see picture below) and used this to mount the projector mount to the track. Since the projector mount also had left/right adjustment I could take advantage of that as well. I cut the track lengths to span ceiling joists (24”) and screwed each end of track to joists. I also used extra curtain hooks to allow easy removal of projector basket protector by hanging it to hooks by zip ties. Since I have a mevo+ I also used the basket to wrap screen to block radar interference from the projector cooling fan.
Hopefully this can be useful for others.
