I can't for the life of me get a straight picture. Seems one corner is always lower than the other or I can't get it to fill the screen correctly... What a pain in the ass..... Seriously what's the point of having zoom when all it does it cut off the pic and not zoom anything at all? I don't get why these short throws don't have a zoom lens that works.... This thing is gonna drive me crazy...
Is it me or does the Optoma gt1080 suck to setup?

If one corner is always lower, your projector is most likely not centered. Your mount should allow for a little left or right movement. Make sure the center of the lens is centered to the screen. If it isn't, your image won't look square.

Optoma 1080 has no lens zoom. I think the zoom you are referring to must be some kind of picture zoom, which just blows up the video signal.
My Benq 1085ST has a lens zoom which does make installation alot easier.
With no zoom your only option to fill the screen is to position the projector the exact correct distance. Trial and error or ProjectorCentral.com's calculator can help.
If the picture is not aligned, either the projector is off-center to the screen, or not squarely aligned. It could also be that your screen is not exactly flat.
If floor-mounting the projector is an option, that may be easier since you can just move it around to get the exact angles correct, then get something like this (All Sport Systems TerraShield):
Good luck getting it lined up! Its a pain, but once aligned, its worth the struggle.
I just installed a new project mount for by Benq...the original installation had it mounted tight to the ceiling. It had to be pointed down slightly to get the image on the screen. This caused me to have to use Keystone correction, which shrinks the image size, along with introducing scaling artifacts. I got a ceiling mount that allows you to adjust the drop from 1-2 feet, allowing me to get the lens at the exact top edge of the screen. It looks so much better now.
