https://www.youtube.com/watch?v=9tRs_acRImU, starting at 05:20 he says you cannot normalize the ball with Mevo+. Is that a big issue and how difficult would it be for Flightscope to add that to the software?

With M+ in the FS Golf app you can label the ball you are using and it allows you to select premium versus range. It does not use this to normalize anything though so it's the same idea as tagging two drivers differently to compare shafts.
I believe the higher end FS units do have range ball normalization so I'd suspect FS could add this relatively easily if they wanted to as I'd guess it's just a series of factors applied to various ball parameters when you pick a range ball instead of a premium ball.
I wonder how accurate the normalizations really are even on the top end units though:
- there are a bunch of different range balls out there with varying limited flight models so picking the exact model is a bit of a guess when I tried to figure it out even before having a launch monitor
- unless you are using this as a high end private club then I suspect the quality of the balls in your basket will be so varied that even if you selected the right type of ball each actual ball would perform so differently the normalization calculations would be off. I went to the range yesterday and it had newly installed top tracer so I gave it a try and watching it adjust ball flights for the old balls with no dimples was funny. Those balls were knuckling around so much it kept changing the flight on the screen.
I'd guess having some normalization is better than nothing or fairly decent if you can identify the right ball and they are all in good condition but practically I'm not sure how much value this feature has unless you're selecting before each shot how worn out the ball is.
