Graphics Card Requirements + Simulator Software

I'm configuring a PC to run my sim, hoping someone can help.

First off, I'm still debating between TGC and E6, so I'll happily also take any advice there.

But second, does anyone have any thoughts between these two graphics cards?

NVIDIA GeForce GTX 1660 SUPER (6 GB GDDR6 dedicated)
NVIDIA GeForce RTX 3060 (12 GB GDDR6 dedicated) with LHR

Is the latter necessary? Is it worth an extra $200?

I would say they both should work just fine, although as I recall, the minimum requirements for E6 is a GTX1070. The GTX1660 super is overall a bit slower, around 10%.
Not sure I would pay much more than $150 more for a RTX 3060 over a GTX 1660 super. The 3060 is almost 40% faster overall, so the value depends on how much you want to future proof.

Thanks! Do you have a better option you'd recommend? I'm trying to stay under $1000 for the PC, these two options are about $700 and $900 respectively. Through HP.

Sorry I missed your question. I suppose if I were buying a card now, I would go with a RX 6600.

Kinda depends on your projector also. If its not 4k then you can run in 1080p and the GTX 1660 will probably be fine. If you want to run in 4k and 60 fps you would probably want something faster. I have a GTX 1080 can't run 4k at 60 fps consistently. I'm using the game software we cannot mention here.
