How do new updates work if you are on the beta program? I was added to the beta program but saw a new update a couple days ago that is for the approved release. Would I update to that and then get notified later that a new beta release is available or should I stay on the beta version I'm currently at?

Update to the latest version. If the latest public release is higher then the latest BETA version, then Labs will not ask to download the BETA. The highest version is always the latest, so download the public version until there is a new BETA.
